The first time I heard of it ("tomato pie", hmm, oooookaaaay) my brain suffered a little cognitive dissonance (never heard those two words, tomato and pie, joined at the hip like that before). Seconds after taking a bite however, I was begging for the recipe. Many thanks to Diane Connolly (aka Lady Di) who graciously wrote it out on some post-it notes for me at the dinner table. It is the first thing I cooked when I got back home. Think pizza meets cheesy bread and they make-out in a pie crust. The recipe lends itself to estimates. Handfuls of this, handfuls of that. I measured, but you could eyeball it and it would still work out. Feel free to change the cheeses around, play with the spices. I made a homemade pie crust, but for this recipe a good quality prepared crust would work fine.

Surprisingly easy soup to make considering the depth of flavor it has. I tweaked it a little bit: while sauteeing the onions in a separate pan, I cooked the carrots with some tomato sauce and curry powder and then combined all the ingredients.

Crunchy Peanut Slaw 1 big bowl of slaw, serves at least 8 1 medium head green cabbage, outer leaves removed 1 1/2 cups roasted, unsalted peanuts 1 bunch green onions 1 cup chopped cilantro (about two big handfuls unchopped) Salt and pepper Dressing: 1/2 cup light oil, like canola 3 tablespoons rice vinegar 1 tablespoon sugar (or more, to taste) 1 tablespoon sesame oil 1 teaspoon soy sauce (or more, to taste) Shred the cabbage very finely. The fineness of the shredded cabbage is really what makes this salad; you want it in in threads, almost, and with the threads chopped into bite-size lengths. Toss with the peanuts in a large bowl. Chop the scallions, including the green and white parts. Toss the scallions and chopped cilantro with the cabbage, seasoning very lightly with salt and pepper. Whisk the dressing until emulsified, then taste and adjust to your own preferences of sweetness and saltiness. Toss with the cabbage. Garnish with a few more peanuts and serve.
1 medium head green cabbage, 1.5 c roasted unsalted peanuts, 1 bunch scallions, 1 c chopped cilantro (2 handfuls unchopped), salt & pepper. dressing: 1/2 c canola or grapeseed oil, 3 T rice vinegar, 1 T sugar, 1 T sesame oil, 1 t soy sauce.
