The first time I traveled to the land of my Austrian ancestors I was taken to a restaurant where I saw "schnitzel" on the menu. Of course I ordered it, thinking I could use a good German sausage in a bun. (You have my permission to pound your head on the wall now.) I mean, who didn't grow up with those fast food joints with the giant hot dogs on the top of them? When the order came I was stunned by how far off it was from what I was expecting; even my gracious hosts had a hard time believing me when I told them that in America a wiener schnitzel was a hot dog (at least where I was from in suburban California). Curses! Yes we tend to distort some traditional dishes here in America, but this one? We weren't even close. "Schnitzel", for the uninitiated, is German for "cutlet" which is usually made with veal and is thinly pounded, breaded and fried.Itsy Bitsy Chocolate Chip Cookies Recipe - 101 Cookbooks

Some good insight on building a branded iPhone app...
iFood Assistant is now one iPhone's 100 most popular paid apps, and No. 2 in the lifestyle category. With its endeavor, Kraft is pulling off a rare trick: getting consumers to pay a one-time 99-cent fee for the app and also sit through ads on it. And in the process, it's collecting useful data for targeting them more closely. The lesson: When a marketer creates something that's actually useful, consumers don't really see it as straight marketing, or they're at least willing to accept advertising as the payoff. Kraft's app, which launched in December, is a helpful tool for consumers looking to make dinners faster, easier and more convenient. "When we look at consumers, we think that they're busy and they're looking for food-planning tools that can make their lives easier," said Ed Kaczmarek, director-innovation, new services at Kraft. "We developed iFood Assistant as a downloadable app so they can use it anytime and anywhere."

It is no secret that I have an obsession with Chinese cuisine. The place that started it all was a local Chinese buffet here in Michigan. After frequent visits to the buffet over the years, I finally decided to take a stab at cooking my own Chinese dishes at home. The majority of the dishes were delicious and I began cooking different Chinese meals every week, but I had always wanted more variety just like the buffet. I had always wondered, “what if I could create a Chinese buffet at home?” I have wanted to do this for along time so I was very excited when I was chosen to be part of the 24,24,24 event presented by Foodbuzz. In this article I will explain how to create your own Chinese buffet at home. I have posted 10 different recipes which include main course, appetizers, soups, side dishes and a dessert. In the food business, there’s a saying, "If you want to make money, make pizza." The ingredients cost next to nothing, and you’ve always got a market hungry for your product. Turn that logic around, and you’ve got an economic case for homemade pizza. Flour and packaged yeast are cheap, water is free (or close to it), and you probably already have the toppings in your fridge. A homemade pizza party can cost less than $2 per person. You can’t even get a slice for that these days.Cooking: Bake Pizza From Scratch Without Special Equipment
Getting a good pizza from a decent pizzeria is pricey, and the El Cheapo Express frozen discs are often indistinguishable from their cardboard backing. Writing for business blog Mainstreet, Allison hit the streets to find someone to teach her how to make a cheap and easy homemade pizza. Andrew, a food studies graduate student, was happy to oblige. In addition to sharing a recipe for the dough, he talks technique. While pizza places and ultra high-end home kitchens might have ovens built for pizza cooking, Andrew insists that the basic tools available in most kitchens are more than adequate to whip up a delicious pizza. The key to good pizza is heat, and lots of it. He has a cast iron griddle heating on the stovetop, and has turned the broiler on high with a rack four inches below the heating element. Pound cakes are of British origin, dating back nearly 300 years and their name came from the fact that original pound cakes contained one pound each of butter (four sticks), sugar (two cups), eggs (eight large) and flour (four cups), with no leaveners other than the air that was whipped into the batter. Marinade: It's one of those culinary terms that evokes an aura of kitchen mystique, as if throwing together a bunch of liquids, flavorings, herbs and spices will magically transform meat, fish or even vegetables into tender dishes bursting with flavor. It sounds almost like a kitchen spell -- albeit without the dramatic incantations, or the smoke (better save that for the grill). Unfortunately, in the real world, marinades have their limitations. Contrary to popular belief, a marinade will not tenderize a cut of meat. But that's all right, it can still impart great flavor. Essentially, a marinade functions as a "dressing" for meat. Like a salad dressing, it's typically composed of an acid (vinegar, citrus juice or wine) and a little oil, with herbs and aromatics added to punch up the flavor. And like a salad dressing, a marinade should be thought of as a seasoning. Most marinades have neither the acidity needed nor the time required to fully "tenderize" a piece of meat, denaturing th

I think its safe to say, we are long overdue for a good vegetarian chili recipe around here. I'm not entirely sure what has taken me so long - I guess I wanted it to be really good. It's not that I wasn't cooking chili, I just wasn't sharing. I kept waiting until I had a pot in front of me that I was giddy about, the kind of chili that has you leaning over the pot, spoon in hand, shaking your head once or twice, saying mmm-hmm. And believe me, I never thought the best pot of chili I'd made (in years) would be inspired by a bunch of those little bags of remnant grains and pulses that collect in my cupboards - lentils, farro, bulgur - but sure enough, that's what happened. This chili is made with bulgur, farro, lentils, chile peppers, crushed tomatoes and some chickpeas I had hanging around. Then you've got the chili powder, and a secret ingredient - a bit of grated ginger. Pierce Street Vegetarian Chili Recipe And yes, like most chili, or stews, this is even better the day after! This

Panqueques de manzana! Receta en inglés.
Joan Nathan calls these Apple Latkes, which is really what got my attention in the first place. I am going to have to beg to differ on that, as they have way too much liquid and flour to really be a “latke”, or fritter. They are pancakes with shredded apples, and while the recipe itself is quite easy I think it will need some flavor tweaking to get it to a more interesting place. Nevertheless, I think it would be worth it and have made some suggestions in the head notes.Drumsticks

Tomato Pie Filed under Casserole, Cheese, Vegetarian Print Options his tomato pie recipe is a result of one of these encounters. The first time I heard of it ("tomato pie", hmm, oooookaaaay) my brain suffered a little cognitive dissonance (never heard those two words, tomato and pie, joined at the hip like that before). Seconds after taking a bite however, I was begging for the recipe. Many thanks to Diane Connolly (aka Lady Di) who graciously wrote it out on some post-it notes for me at the dinner table. It is the first thing I cooked when I got back home. Think pizza meets cheesy bread and they make-out in a pie crust. The recipe lends itself to estimates. Handfuls of this, handfuls of that. I measured, but you could eyeball it and it would still work out. Feel free to change the cheeses around, play with the spices. I made a homemade pie crust, but for this recipe a good quality prepared crust would work fine. How To Make Butter In Under 5 Minutes! | Over The Hill And On A Roll

This bread pudding recipe is based on one from the famed Bon Ton Cafe in New Orleans. My friend Becca has been making this bread pudding in her family for years and made us a batch for the holidays. The sauce is loaded with bourbon (Becca says the Bon Ton's sauce has even more bourbon in it), so you might want to use somewhat less. One of my favorite things about this — besides the whole CHOCOLATE and PUDDING and PIE thing — is the way that despite its all-id, kid-like nature, this pie is surprisingly unsweet and not heavy. There’s barely a half cup of sugar in the whole she-bang and the lack of excessive richness (it’s a milk and cornstarch pudding, not a weighty egg yolk and cream custard) makes for something you can easily crave on a hot summer day, although you’ve already been warned that that craving may strike without warning.cheesecake-marbled brownies | smitten kitchen

When blueberries are in season, what better to do with them (other than eating them straight from the basket) than make blueberry pie? Blueberries have been found to be a "superfood", so good for you that you should go out of your way to eat them. They neutralize free radicals, protect your heart, improve your vision, and protect against degenerative brain diseases. (See the whole story at The World's Healthiest Foods website.) There are only four things going on here: a single pie crust, some streusel, hunks of quartered peaches and crème fraîche but when they’re baked together, the crust becomes a shell that decks your plate with pastry flecks and flakes and the filling bakes itself into something more like a tangy custard and less like a traditionally sweet slumpy pie. This is a peach pie for grownups, almost excessively so: I always wish desserts were a little less sweet and still felt this pie would benefit from additional sugar (I present that option below). The Fake Shack (or the Shack Burger at Home) | Serious Eats : Recipes

Devouring the Food Chain One Bite at a Time
This recipe may be intimidating, but, hey, who isn’t up for a challenge? Experienced home bakers will likely recognize the steps, which took time and patience to develop. I had been drawn to the baguette a decade ago, then gave up thinking it was impossible to reproduce in a home oven. But over the past couple of years I went back to it, tried different techniques and then finally arrived at a recipe I was happy with. To read more about that process - which led to an award winning baguette - read the essay I posted here. Beginners will need to be patient—to start baking bread with this recipe is like jumping into calculus after third-grade math. So here’s a tip: Pick up Daniel Leader’s Local Breads or Peter Reinhart’s The Bread Baker’s Apprentice and try their baguette recipes before plunging over the dark side.Cashew Chicken Recipe | Simply Recipes

you take whole clementines and boil them for two hours before grinding them up, adding some sugar, a lot of eggs, a ton of ground almonds and baking powder and that’s it: you have a cake.
Clementine Cake Adapted from Nigella Lawson … Oh right, I forgot to mention that this cake was darn good. I am not going to tell you that it is my favorite cake ever. It wasn’t. But all of the things I was worried would go wrong — it would be too bitter, it would be too tough, nobody would eat it — I couldn’t have been further off about. It is ridiculously moist, not bitter and surprisingly popular at a dinner party. You know, until you tell people they’re eating a cake comprised of boiled rinds. 4 to 5 clementines (about 375grams/slightly less than 1 pound total weight) 6 eggs 1 cup plus 2 tablespoons (225 grams) sugar 2 1/3 cups (250 grams) ground almonds 1 heaping teaspoon baking powderMom's Macaroni Salad

The cookies use pureed white beans in the dough, lots of oats, and whole wheat flour. After a bit of experimenting, I had a baggie full of palm-sized, sesame coated, bun-shaped cookies flavored with aniseed, lemon zest, olive oil and chopped dates. The cookies are beautifully tender, licorice-scented, with a bit of crunch from the sesame seed coating.

Marathon Cookies 2 cups rolled oats (not instant oats) 1 cup whole wheat pastry flour 1 T. aniseed, crushed in mortar and pestle (or spice grinder) 1 t, baking powder 1 t. baking soda zest of one lemon 1/2 t. fine grain sea salt one 15-ounce can white kidney, great northern, or navy beans, rinsed & drained 1/4 cup olive oil 1 cup natural cane sugar (or brown sugar) 1 large egg 1 t. vanilla extract 1/3 cup chopped dates 1/3 cup sesame seeds comments: Excellent recipe! I turned them into chocolate chip cookies by omitting the anise seed and lemon zest and using 1 teaspoon of cinnamon instead. I fell hard for this cookie. Chocolate Puddle Cookie Recipe Without getting too serious, I've been having an internal debate about whether or not I should post this recipe. When I post sweets or treats, I like them to have some sort of whole grain twist, or feature a natural sweetener. I mean, that's usually how I cook and bake. But I have a big-time crush on this cookie, and I figured I'd post the recipe in all it's powdered sugar, chocolaty glory in case some of you want to make a batch for your Valentine's Day sweeties. In short, there are just six ingredients between you a batch of these, no mixer necessary - just a big bowl and wooden spoon. As far as the origins of this recipe? Here are some grilling tips from an honest-to-goodness chef that’ll make your next steak meal your finest work ever.
If you think grilling a great steak is as simple as throwing a slab of meat you bought at the supermarket on your grill and flipping it over a few times, you’re missing out on what could be THE GREATEST STEAK OF YOUR LIFE.
r cooking food but can sometimes impart a gas flavor to your meat. I like to use natural hardwood charcoal started in a chimney. Don’t use lighter fluid; it defeats the purpose of using hardwood charcoal. You want to smell the steak roasting over the coals – that is the best part! Some people swear by mesquite soaked in apple juice others say you cook your steak too fast to get any benefit. Wood chips can add flavor if you are smoking your meat but that usually takes a lot more time than it takes to grill a steak. My recommendation is that if you are curious, play around see if you can taste and enjoy the difference. 6. Hot coals — Set your coals up so that you have zones of cooking. Always start off on a hot spot. You want good color and flavor from the high heat. When you flip it, don’t put it down on the same spot as before — it will be cooler. Find another hot spot to continue getting good color and flavor. 7. Don’t touch it! — This is one of the biggesBest Grilled Cheese Sandwiches - Grilled Cheese Recipes - delish.com

The stretchability of a whole chicken is a frequently discussed topic among food and frugality bloggers. It’s commonly accepted that a single fowl will feed a family of 11 for weeks, years - even millennia. Even after 20 months of keeping CHG, I’m constantly gobsmacked by how moms and dads can create dinner after dinner from the same bird. Here’s the thing: sometimes, those dinners aren’t the healthiest meals in the world. There tend to be a lot of quesadillas and casseroles whenever these type of posts pop up, not to mention chicken salads drenched with full-fat mayo. Now, there’s nothing wrong with this whatsoever (except the mayo - blech), but I wanted to see if I could put a healthier spin on it.Homemade Granola Bars « Wit & Whistle

Fascinating Fact: Ketchup was originally a fish sauce originating in the orient. Two words from the Fujian region of China were used to describe a fish brine / sauce and a tomato sauce - both words bear a striking resemblance in sound to the word “ketchup”; the words are: ke-tsap and kio-chiap. Early western ketchups were made with fish and spices, or mushrooms. In fact, mushroom ketchup is still available in the United Kingdom and it is prized by some modern chefs for its natural inclusion of monosodium glutamate - the only substance known to stimulate the 5th human taste sense umami (savoury).

How to create a quick infused olive oil.
This is a great method for making small amounts of flavored oils for use at the last minute as embellishments for soups, vegetables, and simple fish dishes. It works best with soft, fresh, fragrant ingredients like tender herbs, garlic, or grated citrus zest. Extra-virgin olive oil, subtly infused with lemon zest, is one of my favorites. There is no set formula for making these oils. The ratio of flavoring to oil will depend on the intensity of the ingredients you choose. Since they flavor the oil quickly, you can taste and add more flavorings, if you wish. These oils are splendid on many foods -- practically anything you would dress with olive oil.Живая Кулинарная Книга : livecookbook.ru

Crunchy Peanut Slaw 1 big bowl of slaw, serves at least 8 1 medium head green cabbage, outer leaves removed 1 1/2 cups roasted, unsalted peanuts 1 bunch green onions 1 cup chopped cilantro (about two big handfuls unchopped) Salt and pepper Dressing: 1/2 cup light oil, like canola 3 tablespoons rice vinegar 1 tablespoon sugar (or more, to taste) 1 tablespoon sesame oil 1 teaspoon soy sauce (or more, to taste) Shred the cabbage very finely. The fineness of the shredded cabbage is really what makes this salad; you want it in in threads, almost, and with the threads chopped into bite-size lengths. Toss with the peanuts in a large bowl. Chop the scallions, including the green and white parts. Toss the scallions and chopped cilantro with the cabbage, seasoning very lightly with salt and pepper. Whisk the dressing until emulsified, then taste and adjust to your own preferences of sweetness and saltiness. Toss with the cabbage. Garnish with a few more peanuts and serve.

There are a whole lot of foods that I’m not sure are even worth the trouble of making at home, though I suspect this list varies by what you have accessible in your neighborhood. I feel fairly certain I won’t be making any falafel sandwiches in our new kitchen, especially now that I’ve discovered our proximity to the $2.50 perfection at Mamouns. I’m not even sure I’ll ever make pirogi again, after finding my fluffy, light pirogi nirvana this weekend at the Ukranian National Home. And in general, I’ve never seen a whole lot of purpose in making bagels from scratch in New York City — save a one-time baking frenzy — and certainly not when we lived less than two blocks from our bagel ideal, Murrays.
