No-Knead Pizza Dough Adapted from Jim Lahey, Co. Makes four 12-inch pizza crusts 3 cups all-purpose or bread flour, more for dusting ¼ teaspoon instant yeast (such as SAF brand) 1½ teaspoons salt 1½ cups water 1. In a large bowl, mix the flour with the yeast and salt. Add the water and stir until blended (the dough will be very sticky). Cover the bowl with plastic wrap and let rest for 12 to 24 hours in a warm spot, about 70°. 2. Place the dough on a lightly floured work surface and lightly sprinkle the top with flour. Fold the dough over on itself once or twice, cover loosely with plastic wrap and let rest for 15 minutes. 3. Divide the dough into 4 pieces and shape each piece into a ball. Generously sprinkle a clean cotton towel with flour and cover the dough balls with it. Let the dough rise for 2 hours. 4. Stretch or toss the dough into the desired shape, cover with toppings and bake on top of a very hot pizza stone.

I like this recipe mainly for the sauce, it was very simple to make and was cheap (probably cheaper than buying a can of pasta sauce).

The first time I traveled to the land of my Austrian ancestors I was taken to a restaurant where I saw "schnitzel" on the menu. Of course I ordered it, thinking I could use a good German sausage in a bun. (You have my permission to pound your head on the wall now.) I mean, who didn't grow up with those fast food joints with the giant hot dogs on the top of them? When the order came I was stunned by how far off it was from what I was expecting; even my gracious hosts had a hard time believing me when I told them that in America a wiener schnitzel was a hot dog (at least where I was from in suburban California). Curses! Yes we tend to distort some traditional dishes here in America, but this one? We weren't even close. "Schnitzel", for the uninitiated, is German for "cutlet" which is usually made with veal and is thinly pounded, breaded and fried.

Joan Nathan calls these Apple Latkes, which is really what got my attention in the first place. I am going to have to beg to differ on that, as they have way too much liquid and flour to really be a “latke”, or fritter. They are pancakes with shredded apples, and while the recipe itself is quite easy I think it will need some flavor tweaking to get it to a more interesting place. Nevertheless, I think it would be worth it and have made some suggestions in the head notes.

The first time I heard of it ("tomato pie", hmm, oooookaaaay) my brain suffered a little cognitive dissonance (never heard those two words, tomato and pie, joined at the hip like that before). Seconds after taking a bite however, I was begging for the recipe. Many thanks to Diane Connolly (aka Lady Di) who graciously wrote it out on some post-it notes for me at the dinner table. It is the first thing I cooked when I got back home. Think pizza meets cheesy bread and they make-out in a pie crust. The recipe lends itself to estimates. Handfuls of this, handfuls of that. I measured, but you could eyeball it and it would still work out. Feel free to change the cheeses around, play with the spices. I made a homemade pie crust, but for this recipe a good quality prepared crust would work fine.

This bread pudding recipe is based on one from the famed Bon Ton Cafe in New Orleans. My friend Becca has been making this bread pudding in her family for years and made us a batch for the holidays. The sauce is loaded with bourbon (Becca says the Bon Ton's sauce has even more bourbon in it), so you might want to use somewhat less. My father still gets a dazed and happy look in his eyes when this bread pudding is mentioned.

One of my favorite things about this — besides the whole CHOCOLATE and PUDDING and PIE thing — is the way that despite its all-id, kid-like nature, this pie is surprisingly unsweet and not heavy. There’s barely a half cup of sugar in the whole she-bang and the lack of excessive richness (it’s a milk and cornstarch pudding, not a weighty egg yolk and cream custard) makes for something you can easily crave on a hot summer day, although you’ve already been warned that that craving may strike without warning.

There are only four things going on here: a single pie crust, some streusel, hunks of quartered peaches and crème fraîche but when they’re baked together, the crust becomes a shell that decks your plate with pastry flecks and flakes and the filling bakes itself into something more like a tangy custard and less like a traditionally sweet slumpy pie. This is a peach pie for grownups, almost excessively so: I always wish desserts were a little less sweet and still felt this pie would benefit from additional sugar (I present that option below).

I've never thought of using yogurt as a filling for tarts, but this sounds delicious and light.
These charming little tartlets finish off a meal nicely. Oat-crusted with a creamy, ginger-spiked yogurt filling, they are delightful topped with any number of adornments - fresh berries, dried fruit, or crystallized ginger.

The cookies use pureed white beans in the dough, lots of oats, and whole wheat flour. After a bit of experimenting, I had a baggie full of palm-sized, sesame coated, bun-shaped cookies flavored with aniseed, lemon zest, olive oil and chopped dates. The cookies are beautifully tender, licorice-scented, with a bit of crunch from the sesame seed coating.

Marathon Cookies 2 cups rolled oats (not instant oats) 1 cup whole wheat pastry flour 1 T. aniseed, crushed in mortar and pestle (or spice grinder) 1 t, baking powder 1 t. baking soda zest of one lemon 1/2 t. fine grain sea salt one 15-ounce can white kidney, great northern, or navy beans, rinsed & drained 1/4 cup olive oil 1 cup natural cane sugar (or brown sugar) 1 large egg 1 t. vanilla extract 1/3 cup chopped dates 1/3 cup sesame seeds comments: Excellent recipe! I turned them into chocolate chip cookies by omitting the anise seed and lemon zest and using 1 teaspoon of cinnamon instead. Instead of adding dates, I used 1 cup chocolate chips then rolled in raw sugar before flattening them. I substituted cardomon and powdered ginger for the aniseed, to great effect.

Maple is a nice match for many berries and I made it my sweetener of choice for this cake. In the back of my mind, I was aiming for a rustic cake that used no white sugar and no white flour. It's a stunner of a cake - the huckleberries burst and bleed into the crumb of the cake in quite a dramatic fashion. The crumble crust plays off the tenderness of the cake nicely, so be sure to get a bit of it in every bite.

The fineness of the shredded cabbage is really what makes this salad; you want it in in threads, almost, and with the threads chopped into bite-size lengths. Toss with the peanuts in a large bowl. Chop the scallions, including the green and white parts. Toss the scallions and chopped cilantro with the cabbage, seasoning very lightly with salt and pepper. Whisk the dressing until emulsified, then taste and adjust to your own preferences of sweetness and saltiness. Toss with the cabbage. Garnish with a few more peanuts and serve.

I’m not even sure I’ll ever make pirogi again, after finding my fluffy, light pirogi nirvana this weekend at the Ukranian National Home. And in general, I’ve never seen a whole lot of purpose in making bagels from scratch in New York City — save a one-time baking frenzy — and certainly not when we lived less than two blocks from our bagel ideal, Murrays. (I’m a little lost for a decent bagel in the East Village — anyone? I think we’ve been spoiled.)

There is actually a small ideal window of heat that you should be aiming for in order to prevent sticking, optimize browning of your meat, and develop a nice fond on the pan.

In case you missed the article that Mike B posted last week, check out The Truth About Your Food. Did you Taco Bell that of the 64 ingredients in their Mexican Pizza, one of them is silicon dioxide (aka sand), which is added to the ground beef? While you may think you can at make good food choices at fast food restaurants, even if you only eat the meat, there's likely to be 20+ ingredients added!
