No-Knead Pizza Dough Adapted from Jim Lahey, Co. Makes four 12-inch pizza crusts 3 cups all-purpose or bread flour, more for dusting ¼ teaspoon instant yeast (such as SAF brand) 1½ teaspoons salt 1½ cups water 1. In a large bowl, mix the flour with the yeast and salt. Add the water and stir until blended (the dough will be very sticky). Cover the bowl with plastic wrap and let rest for 12 to 24 hours in a warm spot, about 70°. 2. Place the dough on a lightly floured work surface and lightly sprinkle the top with flour. Fold the dough over on itself once or twice, cover loosely with plastic wrap and let rest for 15 minutes. 3. Divide the dough into 4 pieces and shape each piece into a ball. Generously sprinkle a clean cotton towel with flour and cover the dough balls with it. Let the dough rise for 2 hours. 4. Stretch or toss the dough into the desired shape, cover with toppings and bake on top of a very hot pizza stone.

I like this recipe mainly for the sauce, it was very simple to make and was cheap (probably cheaper than buying a can of pasta sauce).

The first time I traveled to the land of my Austrian ancestors I was taken to a restaurant where I saw "schnitzel" on the menu. Of course I ordered it, thinking I could use a good German sausage in a bun. (You have my permission to pound your head on the wall now.) I mean, who didn't grow up with those fast food joints with the giant hot dogs on the top of them? When the order came I was stunned by how far off it was from what I was expecting; even my gracious hosts had a hard time believing me when I told them that in America a wiener schnitzel was a hot dog (at least where I was from in suburban California). Curses! Yes we tend to distort some traditional dishes here in America, but this one? We weren't even close. "Schnitzel", for the uninitiated, is German for "cutlet" which is usually made with veal and is thinly pounded, breaded and fried.

Seven ingredients including potatoes and porcini mushrooms are packed together in an intensely flavorful broth peppered with rosemary and tiny pools of golden olive oil. Just the thing to go along with chunk of butter-kissed garlic bread. Also, (and here's the best part about this soup) it just keeps on giving. I used the mushrooms in tacos the next day for lunch, and later in the evening used the broth and soba noodles, a bit of spinach and some tofu for a quick supper.

Simply stop eating during the 12-16 hour period before you want to be awake. Once you start eating again, your internal clock will be reset as though it is the start of a new day.  Your body will consider the time you break your fast as your new "morning." For example, if you want to start waking up at 2:00 am, you should start fasting between 10:00 am or 2:00 pm the previous day, and don't break your fast until you wake up at 2:00 am. Make sure you eat a nice healthy meal to jumpstart your system. Another example: If you are travelling from Los Angeles to Tokyo, figure out when breakfast is served in Tokyo, and don't eat for the 12-16 hours before Tokyo's breakfast time.

Pollan, who seemed to be aware of the nitrogen problem in his book The Omnivore's Dilemma, left nuance behind, as well as the laws of chemistry, in his recommendations. ... n his book, Pollan quotes geographer Vaclav Smil to the effect that 40 percent of the people alive today would not be alive without the ability to artificially synthesize nitrogen. But in his directive on food policy, Pollan damns agriculture's dependence on fossil fuels, and urges the president to encourage agriculture to move away from expensive and declining supplies of natural gas toward the unlimited sunshine that supported life, and agriculture, as recently as the 1940s."
"On the desk in front of me are a dozen books, all hugely critical of present-day farming.... To the farmer on the ground, though, a farmer blessed with free choice and hard won experience, the moral choices aren’t quite so easy. Biotech crops actually cut the use of chemicals, and increase food safety. Are people who refuse to use them my moral superiors? Herbicides cut the need for tillage, which decreases soil erosion by millions of tons. The biggest environmental harm I have done as a farmer is the topsoil (and nutrients) I used to send down the Missouri River to the Gulf of Mexico before we began to practice no-till farming, made possible only by the use of herbicides. The combination of herbicides and genetically modified seed has made my farm more sustainable, not less, and actually reduces the pollution I send down the river."

I am going to have to beg to differ on that, as they have way too much liquid and flour to really be a “latke”, or fritter. They are pancakes with shredded apples, and while the recipe itself is quite easy I think it will need some flavor tweaking to get it to a more interesting place. The first time I heard of it ("tomato pie", hmm, oooookaaaay) my brain suffered a little cognitive dissonance (never heard those two words, tomato and pie, joined at the hip like that before). Seconds after taking a bite however, I was begging for the recipe. Many thanks to Diane Connolly (aka Lady Di) who graciously wrote it out on some post-it notes for me at the dinner table. It is the first thing I cooked when I got back home. Think pizza meets cheesy bread and they make-out in a pie crust. The recipe lends itself to estimates. Handfuls of this, handfuls of that. I measured, but you could eyeball it and it would still work out. Feel free to change the cheeses around, play with the spices. I made a homemade pie crust, but for this recipe a good quality prepared crust would work fine.

This bread pudding recipe is based on one from the famed Bon Ton Cafe in New Orleans. My friend Becca has been making this bread pudding in her family for years and made us a batch for the holidays. The sauce is loaded with bourbon (Becca says the Bon Ton's sauce has even more bourbon in it), so you might want to use somewhat less. One of my favorite things about this — besides the whole CHOCOLATE and PUDDING and PIE thing — is the way that despite its all-id, kid-like nature, this pie is surprisingly unsweet and not heavy. There’s barely a half cup of sugar in the whole she-bang and the lack of excessive richness (it’s a milk and cornstarch pudding, not a weighty egg yolk and cream custard) makes for something you can easily crave on a hot summer day, although you’ve already been warned that that craving may strike without warning.

So, I set out to determine the farthest point from a Micky Dee’s – in the lower 48 states, at least. This endeavor required information, and the nice folks at AggData were kind enough to provide it to me: a complete list of all 13,000-or-so U.S. restaurants, in CSV format, geolocated for maximum convenience. From there, a bit of software engineering gymnastics, and… Behold, a visualization of the contiguous United States, colored by distance to the nearest domestic McDonald’s!

There are only four things going on here: a single pie crust, some streusel, hunks of quartered peaches and crème fraîche but when they’re baked together, the crust becomes a shell that decks your plate with pastry flecks and flakes and the filling bakes itself into something more like a tangy custard and less like a traditionally sweet slumpy pie. This is a peach pie for grownups, almost excessively so: I always wish desserts were a little less sweet and still felt this pie would benefit from additional sugar (I present that option below).

For some time, researchers have been finding that people who exercise don’t necessarily lose weight. A study published online in September in The British Journal of Sports Medicine was the latest to report apparently disappointing slimming results.

Oat-crusted with a creamy, ginger-spiked yogurt filling, these charming tartlets finish off a meal quite nicely. 1 cup whole wheat pastry flour 1/3 cup rolled oats scant 1/2 teaspoon fine-grain sea salt 1/3 cup + 1 tablespoon butter, coconut oil, or olive oil 2 tablespoons maple syrup 2 tablespoons natural cane sugar (optional) 1/4 teaspoon toasted sesame oil 1 cup plain Greek yogurt (I use low-fat here) 1/4 cup maple syrup zest of one lemon 3 teaspoons fresh ginger juice* 2 large eggs, lightly beaten crystalized ginger, dried fruit, or fresh fruit/berries for topping special equipment: 6 small tart (4-inch) pans or I suspect one 9-inch tart pan would be just about right for a single tart.
I've never thought of using yogurt as a filling for tarts, but this sounds delicious and light.
These charming little tartlets finish off a meal nicely. Oat-crusted with a creamy, ginger-spiked yogurt filling, they are delightful topped with any number of adornments - fresh berries, dried fruit, or crystallized ginger.

The cookies use pureed white beans in the dough, lots of oats, and whole wheat flour. After a bit of experimenting, I had a baggie full of palm-sized, sesame coated, bun-shaped cookies flavored with aniseed, lemon zest, olive oil and chopped dates. The cookies are beautifully tender, licorice-scented, with a bit of crunch from the sesame seed coating.

Marathon Cookies 2 cups rolled oats (not instant oats) 1 cup whole wheat pastry flour 1 T. aniseed, crushed in mortar and pestle (or spice grinder) 1 t, baking powder 1 t. baking soda zest of one lemon 1/2 t. fine grain sea salt one 15-ounce can white kidney, great northern, or navy beans, rinsed & drained 1/4 cup olive oil 1 cup natural cane sugar (or brown sugar) 1 large egg 1 t. vanilla extract 1/3 cup chopped dates 1/3 cup sesame seeds comments: Excellent recipe! I turned them into chocolate chip cookies by omitting the anise seed and lemon zest and using 1 teaspoon of cinnamon instead. Instead of adding dates, I used 1 cup chocolate chips then rolled in raw sugar before flattening them. I substituted cardomon and powdered ginger for the aniseed, to great effect.

Brugte lidt (for meget?) mandelessens i toppen - en kvart teskefuld må kunne gøre det, men smagsmæssigt er det virkelig godt. I øvrigt bliver den sådan lidt "wet", som på Deb's billeder, men det er nu kun godt (og sikkert fordi kirsebærrene er så saftige, også...)

The Results So Far I’ve been doing this experiment for 3 weeks now, and I can’t believe I didn’t do it sooner. I literally never have to go out shopping anymore, and I hardly even need to use dishes as she prepares everything so I can eat it directly out of Tupperware (which I can place in the dishwasher). Best of all - I now have over 10 hours a week that I didn’t have before. I bet it doesn’t take her more than an extra hour or two a week worth of effort, since she’s cooking meals for her family anyway - and I don’t care if it takes her only 10 minutes a week. The extra time I have is worth it. She asks for my input, but I for the most part ask her to make any healthy food she wants (high in fiber and protein, lots of fresh vegetables/fruits, lean meats etc etc). It is the first time in years I’ve had fruits and vegetables fresh from the farmers market. I’m eating better than ever, and cheaper than if I was going out to restaurants.

Sounds insane, but maybe INSANELY DELICIOUS?
It calls for roasting a chicken in a big pot with a pint of milk, a lot of lemon zest, a cinnamon stick, and unpeeled garlic cloves. Odd, right? Milk, cinnamon, and chicken were three things I really wouldn't ever think to combine. And yet it had a irresistible appeal.

Maple is a nice match for many berries and I made it my sweetener of choice for this cake. In the back of my mind, I was aiming for a rustic cake that used no white sugar and no white flour. The crumble crust plays off the tenderness of the cake nicely, so be sure to get a bit of it in every bite.

The fineness of the shredded cabbage is really what makes this salad; you want it in in threads, almost, and with the threads chopped into bite-size lengths. Toss with the peanuts in a large bowl. Chop the scallions, including the green and white parts. Toss the scallions and chopped cilantro with the cabbage, seasoning very lightly with salt and pepper. Whisk the dressing until emulsified, then taste and adjust to your own preferences of sweetness and saltiness. Toss with the cabbage. Garnish with a few more peanuts and serve.

There are a whole lot of foods that I’m not sure are even worth the trouble of making at home, though I suspect this list varies by what you have accessible in your neighborhood. I feel fairly certain I won’t be making any falafel sandwiches in our new kitchen, especially now that I’ve discovered our proximity to the $2.50 perfection at Mamouns. I’m not even sure I’ll ever make pirogi again, after finding my fluffy, light pirogi nirvana this weekend at the Ukranian National Home. And in general, I’ve never seen a whole lot of purpose in making bagels from scratch in New York City — save a one-time baking frenzy — and certainly not when we lived less than two blocks from our bagel ideal, Murrays. (I’m a little lost for a decent bagel in the East Village — anyone? I think we’ve been spoiled.)
