Company Man - Jim Lahey reveals his recipe for no-knead pizza dough | People New York - TastingTable
http://tastingtable.com/entry_detail/99/Jim_Lahey_reveals_his_recipe_for_no-knead_pizza_dough_.htm

No-Knead Pizza Dough Adapted from Jim Lahey, Co. Makes four 12-inch pizza crusts 3 cups all-purpose or bread flour, more for dusting ¼ teaspoon instant yeast (such as SAF brand) 1½ teaspoons salt 1½ cups water 1. In a large bowl, mix the flour with the yeast and salt. Add the water and stir until blended (the dough will be very sticky). Cover the bowl with plastic wrap and let rest for 12 to 24 hours in a warm spot, about 70°. 2. Place the dough on a lightly floured work surface and lightly sprinkle the top with flour. Fold the dough over on itself once or twice, cover loosely with plastic wrap and let rest for 15 minutes. 3. Divide the dough into 4 pieces and shape each piece into a ball. Generously sprinkle a clean cotton towel with flour and cover the dough balls with it. Let the dough rise for 2 hours. 4. Stretch or toss the dough into the desired shape, cover with toppings and bake on top of a very hot pizza stone.

http://blogchef.net/foodbuzz-24-24-24-chinese-buffet-at-home/
It is no secret that I have an obsession with Chinese cuisine. The place that started it all was a local Chinese buffet here in Michigan. After frequent visits to the buffet over the years, I finally decided to take a stab at cooking my own Chinese dishes at home. The majority of the dishes were delicious and I began cooking different Chinese meals every week, but I had always wanted more variety just like the buffet. I had always wondered, “what if I could create a Chinese buffet at home?” I have wanted to do this for along time so I was very excited when I was chosen to be part of the 24,24,24 event presented by Foodbuzz. In this article I will explain how to create your own Chinese buffet at home. I have posted 10 different recipes which include main course, appetizers, soups, side dishes and a dessert. All of these items can be found at almost any Chinese buffet in the United States. The entire meal was all cooked in the same day and took me approximately 7 hours of straight cooki

DIY Pizza: Cheaper, Tastier, More Fun | Food & Drink | Lifestyle | Mainstreet
http://mainstreet.com/article/lifestyle/food-drink/diy-pizza-cheaper-tastier-more-fun
In the food business, there’s a saying, "If you want to make money, make pizza." The ingredients cost next to nothing, and you’ve always got a market hungry for your product. Turn that logic around, and you’ve got an economic case for homemade pizza. Flour and packaged yeast are cheap, water is free (or close to it), and you probably already have the toppings in your fridge. A homemade pizza party can cost less than $2 per person. You can’t even get a slice for that these days.
Cooking: Bake Pizza From Scratch Without Special Equipment
http://lifehacker.com/5177742/bake-pizza-from-scratch-without-special-equipment
Getting a good pizza from a decent pizzeria is pricey, and the El Cheapo Express frozen discs are often indistinguishable from their cardboard backing. Learn how to make your own without inheriting a wood-fired oven. Photo by Foodie. Writing for business blog Mainstreet, Allison hit the streets to find someone to teach her how to make a cheap and easy homemade pizza. Andrew, a food studies graduate student, was happy to oblige. In addition to sharing a recipe for the dough, he talks technique. While pizza places and ultra high-end home kitchens might have ovens built for pizza cooking, Andrew insists that the basic tools available in most kitchens are more than adequate to whip up a delicious pizza. The key to good pizza is heat, and lots of it. He has a cast iron griddle heating on the stovetop, and has turned the broiler on high with a rack four inches below the heating element. He cuts off a racquet-ball sized portion of the dough, and uses his fingers to stretch it, careful

Chimichurri Recipe Print Options * Print (no photos) * Print (with photos) Ingredients * 1 cup firmly packed fresh flat-leaf parsley, trimmed of thick stems * 3-4 garlic cloves * 2 Tbsps fresh oregano leaves (can sub 2 teaspoons dried oregano) * 1/2 cup olive oil * 2 Tbsp red or white wine vinegar * 1 teaspoon sea salt * 1/4 teaspoon freshly ground black pepper * 1/4 teaspoon red pepper flakes Method 1 Finely chop the parsley, fresh oregano, and garlic (or process in a food processor several pulses). Place in a small bowl. 2 Stir in the olive oil, vinegar, salt, pepper, and red pepper flakes. Adjust seasonings. Serve immediately or refrigerate. If chilled, return to room temperature before serving. Can keep for a day or two. Serves 4.
It's an Argentinean sauce or condiment, similar to pesto, that is popular throughout South America. This basic version uses fresh parsley, oregano, garlic, oil and vinegar and a little bit of chili pepper, though the variations on this theme are endless.

Cold-Brewed Iced Coffee « The Internet Food Association
http://internetfoodassociation.com/2009/04/12/cold-brewed-iced-coffee/
I like coffee, but I love iced coffee, especially since I learned how to cold-brew it at home. This requires a bit more advance planning than turning your coffee machine on in the morning, but it’s much more flavorful than a hot-brewed coffee and since normal people’s coffee consumption follows a predictable pattern (it’s morning, I want coffee) it’s not hard to plan ahead.
Got 12 hours? You can have iced coffee!

How cost-effective is it to make pantry staples from scratch? - By Jennifer Reese - Slate Magazine

It's easy to find recipes for homemade yogurt, granola, and other common groceries, but far harder to know, cent for cent, if making them really saves money. One Slate writer did the math for us. Jennifer Reese is a dedicated home cook, but was suspicious that there were some home recipes on which she couldn't beat the big-time manufacturers for cost. So she tried out notable recipes for bagels, cream cheese, yogurt, jam, crackers, and granola, and compared her cost to a standard grocery store price, as well as noted how they tasted side by side. Here's Reese's revelation about Alton Brown's granola recipe pitted against even a premium brand like Bear Naked:

Five Minutes a Day for Fresh-Baked Bread
http://www.motherearthnews.com/Real-Food/Artisan-Bread-In-Five-Minutes-A-Day.aspx
Baking bread at home saves hundreds of dollars on groceries every year. With this easy method, each deliciously crusty-on-the-outside, moist-and-chewy-on-the-inside loaf will only cost you about 50 cents and 5 minutes a day. We’re not kidding!
The Juicy Secret to Seasoning Meat | Food & Wine
http://www.foodandwine.com/articles/the-juicy-secret-to-seasoning-meat
But really, it takes no extra effort, just some forethought. And so I will always season lamb shanks the day before they go into the braise. I will try to season chickens the day before, but if I don’t have the chance, I won’t sweat it; and I will season steaks and pork roasts right before searing.
I wanted to know what was practical and reasonable when making everyday meals at home. Buying and seasoning a chicken the day before you plan to roast it couldn’t be easier. But the question remained: Is it tastier?

The minimalist kitchen: 10″ cast iron skillet. The Lodge version and the Le Creuset enamel-coated version both get the job done extremely well. I prefer the enamel coated version because I don’t have to season it and can throw it in the dishwasher, but both are excellent and the Lodge price tag is unbeatable. They work on the stove top, in the oven, and on the grill. 12 qt. stock pot with lid. The best and cheapest way to get one of these is to head to your local restaurant supply store and pick up a well-made aluminum one for under $30. You can make soups, pasta, and sauces, as well as using it for frying and soaking. It also works in the oven and on the grill. 9 qt. cast iron Dutch oven. Two silicone oven mitts. A good knife set. Cutting board. Tongs. Food turner. Infrared thermometer. Baking pans.

The effect of coffee roasting on caffeine content is so negligible as to be immeasurable except under tightly controlled laboratory conditions.

Panqueques de manzana! Receta en inglés.
Joan Nathan calls these Apple Latkes, which is really what got my attention in the first place. I am going to have to beg to differ on that, as they have way too much liquid and flour to really be a “latke”, or fritter. They are pancakes with shredded apples, and while the recipe itself is quite easy I think it will need some flavor tweaking to get it to a more interesting place. Nevertheless, I think it would be worth it and have made some suggestions in the head notes.

Tomato Pie Recipe | Simply Recipes
http://simplyrecipes.com/recipes/tomato_pie/
Tomato Pie Filed under Casserole, Cheese, Vegetarian Print Options his tomato pie recipe is a result of one of these encounters. The first time I heard of it ("tomato pie", hmm, oooookaaaay) my brain suffered a little cognitive dissonance (never heard those two words, tomato and pie, joined at the hip like that before). Seconds after taking a bite however, I was begging for the recipe. Many thanks to Diane Connolly (aka Lady Di) who graciously wrote it out on some post-it notes for me at the dinner table. It is the first thing I cooked when I got back home. Think pizza meets cheesy bread and they make-out in a pie crust. The recipe lends itself to estimates. Handfuls of this, handfuls of that. I measured, but you could eyeball it and it would still work out. Feel free to change the cheeses around, play with the spices. I made a homemade pie crust, but for this recipe a good quality prepared crust would work fine.

Molds On Food: Are They Dangerous?
http://www.fsis.usda.gov/FactSheets/Molds_On_Food/#16
When you can eat things with mold on them.
How Should You Handle Food with Mold on It? Buying small amounts and using food quickly can help prevent mold growth. But when you see moldy food: * Don’t sniff the moldy item. This can cause respiratory trouble. * If food is covered with mold, discard it. Put it into a small paper bag or wrap it in plastic and dispose in a covered trash can that children and animals can’t get into. * Clean the refrigerator or pantry at the spot where the food was stored. * Check nearby items the moldy food might have touched. Mold spreads quickly in fruits and vegetables. * See the attached chart “Moldy Food: When to Use, When to Discard.”
The USDA takes it's stand.

chocolate pudding pie | smitten kitchen
http://smittenkitchen.com/2009/09/chocolate-pudding-pie/
One of my favorite things about this — besides the whole CHOCOLATE and PUDDING and PIE thing — is the way that despite its all-id, kid-like nature, this pie is surprisingly unsweet and not heavy. There’s barely a half cup of sugar in the whole she-bang and the lack of excessive richness (it’s a milk and cornstarch pudding, not a weighty egg yolk and cream custard) makes for something you can easily crave on a hot summer day, although you’ve already been warned that that craving may strike without warning.

Blueberry Pie Recipe | Simply Recipes
http://simplyrecipes.com/recipes/blueberry_pie/
When blueberries are in season, what better to do with them (other than eating them straight from the basket) than make blueberry pie? Blueberries have been found to be a "superfood", so good for you that you should go out of your way to eat them. They neutralize free radicals, protect your heart, improve your vision, and protect against degenerative brain diseases. (See the whole story at The World's Healthiest Foods website.) Yet another good reason to make and eat blueberry pie.

Chews Wise: Baguette Traditional - Fromartz Recipe
http://www.chewswise.com/chews/baguette-traditional-fromartz-recipe.html
Devouring the Food Chain One Bite at a Time
This recipe may be intimidating, but, hey, who isn’t up for a challenge? Experienced home bakers will likely recognize the steps, which took time and patience to develop. I had been drawn to the baguette a decade ago, then gave up thinking it was impossible to reproduce in a home oven. But over the past couple of years I went back to it, tried different techniques and then finally arrived at a recipe I was happy with. To read more about that process - which led to an award winning baguette - read the essay I posted here. Beginners will need to be patient—to start baking bread with this recipe is like jumping into calculus after third-grade math. So here’s a tip: Pick up Daniel Leader’s Local Breads or Peter Reinhart’s The Bread Baker’s Apprentice and try their baguette recipes before plunging over the dark side.

I came across a cookie when I visited Portland a couple years back. It was a crackle-edged puddle of chocolate with a texture that made me think of a collision between soft meringue and a fudgy brownie. I kid you not, love is not too strong a word to use here. I fell hard for this cookie. Chocolate Puddle Cookie Recipe Without getting too serious, I've been having an internal debate about whether or not I should post this recipe. When I post sweets or treats, I like them to have some sort of whole grain twist, or feature a natural sweetener. I mean, that's usually how I cook and bake. But I have a big-time crush on this cookie, and I figured I'd post the recipe in all it's powdered sugar, chocolaty glory in case some of you want to make a batch for your Valentine's Day sweeties. In short, there are just six ingredients between you a batch of these, no mixer necessary - just a big bowl and wooden spoon. As far as the origins of this recipe? I came across a recipe shortly after my ret
Food, Glorious Food Myths - Room for Debate Blog - NYTimes.com
http://roomfordebate.blogs.nytimes.com/2009/03/20/food-glorious-food-myths/
"One big myth is that fruit juice is a healthy part of our diet. Wrong. Drinking a glass of fruit juice a day — which is the equivalent of one soft drink of 110 to 180 calories — has been linked in the U.S., Australia and Spain to increased calorie intake and higher risks of diabetes and heart disease. Eating a piece of fruit provides vitamins, fiber and, best of all, tends to reduce intake of other food. Most fruit juices are just sugary beverages, providing extra calories — all from refined carbohydrates — without sating appetite. ... The added calories can contribute to weight gain and increased risk of both diabetes and heart disease."
Fruit juices aren’t nearly as healthy for you as you think..

Here are some grilling tips from an honest-to-goodness chef that’ll make your next steak meal your finest work ever.
If you think grilling a great steak is as simple as throwing a slab of meat you bought at the supermarket on your grill and flipping it over a few times, you’re missing out on what could be THE GREATEST STEAK OF YOUR LIFE.
r cooking food but can sometimes impart a gas flavor to your meat. I like to use natural hardwood charcoal started in a chimney. Don’t use lighter fluid; it defeats the purpose of using hardwood charcoal. You want to smell the steak roasting over the coals – that is the best part! Some people swear by mesquite soaked in apple juice others say you cook your steak too fast to get any benefit. Wood chips can add flavor if you are smoking your meat but that usually takes a lot more time than it takes to grill a steak. My recommendation is that if you are curious, play around see if you can taste and enjoy the difference. 6. Hot coals — Set your coals up so that you have zones of cooking. Always start off on a hot spot. You want good color and flavor from the high heat. When you flip it, don’t put it down on the same spot as before — it will be cooler. Find another hot spot to continue getting good color and flavor. 7. Don’t touch it! — This is one of the bigges

http://cheaphealthygood.blogspot.com/2009/02/1-chicken-17-healthy-meals-26-bucks-no.html
The stretchability of a whole chicken is a frequently discussed topic among food and frugality bloggers. It’s commonly accepted that a single fowl will feed a family of 11 for weeks, years - even millennia. Even after 20 months of keeping CHG, I’m constantly gobsmacked by how moms and dads can create dinner after dinner from the same bird. Here’s the thing: sometimes, those dinners aren’t the healthiest meals in the world. There tend to be a lot of quesadillas and casseroles whenever these type of posts pop up, not to mention chicken salads drenched with full-fat mayo. Now, there’s nothing wrong with this whatsoever (except the mayo - blech), but I wanted to see if I could put a healthier spin on it.

Now the commonplace pumpkin cookie is often too bready for me and usually covered in some too sweet glaze of sorts. It’s a cookie that I generally shy away from. This one however is a bit different thanks to a nice dose of oatmeal to keep it very soft and chewy. Furthermore, the use of cardamom, currants, and pumpkin seeds give it a curiously different and delightful taste from other pumpkin cookies.

great as written but do not need that much butter on the bottom
# 4 tablespoons butter, olive oil, lard or bacon drippings # 1 1/2 cups medium-grind cornmeal # 1/2 cup all-purpose flour # 1 1/2 teaspoons baking powder # 1 teaspoon salt # 1/4 to 1/2 cup sugar # 2 eggs # 1 1/4 cups milk, more if needed
Used ~1 T bacon fat in pan; 2-3 T sugar, 2 eggs, 1 c thawed frozen corn. Pretty good. The bacon flavor was good - could have used more. Could also have been a bit sweeter, for me. Audrey didn't like the corn kernels, but Gautam did.

Making Your Own Flavored Oils - The Atlantic Food Channel
http://food.theatlantic.com/home-cooking/quick-improvised-flavored-oils.php
How to create a quick infused olive oil.
This is a great method for making small amounts of flavored oils for use at the last minute as embellishments for soups, vegetables, and simple fish dishes. It works best with soft, fresh, fragrant ingredients like tender herbs, garlic, or grated citrus zest. Extra-virgin olive oil, subtly infused with lemon zest, is one of my favorites. There is no set formula for making these oils. The ratio of flavoring to oil will depend on the intensity of the ingredients you choose. Since they flavor the oil quickly, you can taste and add more flavorings, if you wish. These oils are splendid on many foods -- practically anything you would dress with olive oil.

The Results So Far I’ve been doing this experiment for 3 weeks now, and I can’t believe I didn’t do it sooner. I literally never have to go out shopping anymore, and I hardly even need to use dishes as she prepares everything so I can eat it directly out of Tupperware (which I can place in the dishwasher). Best of all - I now have over 10 hours a week that I didn’t have before. I bet it doesn’t take her more than an extra hour or two a week worth of effort, since she’s cooking meals for her family anyway - and I don’t care if it takes her only 10 minutes a week. The extra time I have is worth it. She asks for my input, but I for the most part ask her to make any healthy food she wants (high in fiber and protein, lots of fresh vegetables/fruits, lean meats etc etc). It is the first time in years I’ve had fruits and vegetables fresh from the farmers market. I’m eating better than ever, and cheaper than if I was going out to restaurants.

Jamie Oliver - Recipes - chicken in milk

Chicken in milk
Sounds insane, but maybe INSANELY DELICIOUS?
It calls for roasting a chicken in a big pot with a pint of milk, a lot of lemon zest, a cinnamon stick, and unpeeled garlic cloves. Odd, right? Milk, cinnamon, and chicken were three things I really wouldn't ever think to combine. And yet it had a irresistible appeal.
Here are a few tasty recipes that I’ve set aside for my website. Don’t forget to let me know how you get on with them in the forum. Why don't you inspire me with your cooking as well by uploading your own recipes in the blog section.
Maple Huckleberry Coffee Cake Recipe - 101 Cookbooks

ça a l'air trop bon
Maple is a nice match for many berries and I made it my sweetener of choice for this cake. In the back of my mind, I was aiming for a rustic cake that used no white sugar and no white flour. It's a stunner of a cake - the huckleberries burst and bleed into the crumb of the cake in quite a dramatic fashion. The crumble crust plays off the tenderness of the cake nicely, so be sure to get a bit of it in every bite.

Also known as a "butcher's steak", the hanger steak "hangs" down from a steer's diaphragm, attached to the last rib and spine near the kidneys. It is highly flavorful, but isn't perfectly tender, so it responds well to quick cooking with searing heat, and a thin slicing against the grain to serve.

Interviews with 30 chefs provided dozens of burger-making lessons for the home cook that aren’t terribly difficult and don’t cost much money. And it all yielded the ideal burger.
Over the last decade or so, there has hardly been a serious chef in America who hasn’t taken a shot at reinventing or improving it. They have trained their skills on every element, from the precise grind of beef to the ketchup and pickles. Some have turned their bakers loose on reformulating the bun.

This is his recipe for making tofu from soy milk, and it's the one Yagi uses: Add a teaspoon of liquid nigari to 500 milliliters of cold soy milk and stir. Then pour it into heat-proof bowls and cook (in a water bath or steamer) until it sets like custard. That is it. There's no heating the soy milk to bring it to a certain temperature before adding the nigari. No separating liquids from solids. No straining once it's cooked.

I like the method for determining when the pan is the right temperature.  I don't like the attempted explanations; water and protein change much more than steel between 70 and 300 degrees.
There is actually a small ideal window of heat that you should be aiming for in order to prevent sticking, optimize browning of your meat, and develop a nice fond on the pan.

"There is nothing more frustrating in the kitchen than a dull knife. Not only does it make prep work a chore and your finished product less attractive, it's also downright dangerous. A dull blade requires more pressure to cut into a food, and can easily slip off of a tough onion skin and into your finger. Ouch. Most home cooks should sharpen their knives at least twice a year, and much more frequently if they use their knives every day. There are three ways to go about it.
